Equipment

Broiler pan or shallow roasting pan, 13x9 inch baking dish, medium bowl

Ingredients

  • 3 (1 1/2 lb) Cornish hens
  • 2 tablespoons cornstarch
  • 1 teaspoon dry mustard
  • 1/2 cup water
  • 2 tablespoons red wine vinegar
  • 3 teaspoons honey
  • 1 teaspoon soy sauce
  • 1 (8 ounce) can pineapple chunks in juice, undrained
  • 1 medium green bell pepper, cut into 1-inch pieces
  • 1 medium red bell pepper, cut into 1-inch pieces

Instructions

  1. Remove giblets.

  2. Rinse hens inside and out; pat dry.

  3. Cut each hen in half lengthwise.

  4. Place skin side up on broiler pan or in shallow roasting pan.

  5. Broil 4 to 6 inches from heat 8 to 10 minutes or until skin is crisp; drain.

  6. Heat oven to 325 degrees F.

  7. Place halves skin side up in ungreased 13x9 inch baking dish.

  8. In medium bowl, combine remaining ingredients; spoon over hens.

  9. Bake 45 to 50 minutes or until tender, basting occasionally.
