I went to a talk by a person from Taste of Home and she made some recipes that were "made over" to make it healthier and lower fat. This is one of them.

Equipment

Oven, large bowl, baking sheet, wire rack

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup cake flour
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter
  • 2 tablespoons canola oil
  • 1 egg, lightly beaten
  • 1/3 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon sugar

Instructions

  1. Preheat oven to 400°F.

  2. In a large bowl, combine the flours, brown sugar, baking powder, baking soda and salt.

  3. Cut in butter until mixture resembles coarse crumbs.

  4. Combine the egg, buttermilk, oil and vanilla.

  5. Add to crumb mixture and stir until a soft dough forms.

  6. Turn onto a floured surface and knead gently 6-8 times.

  7. Pat dough into a 6-inch circle and cut into eight wedges.

  8. Separate wedges and place 1 inch apart on an ungreased baking sheet.

  9. Brush tops with milk; sprinkle with sugar.

  10. Bake for 12-14 minutes or until lightly browned. Remove to wire rack and serve warm.
