This is something my former employer at an Italian restaurant used to make after work, one of 2 ways that make me eat Belgian endive. It's not a proper recipe, so i have never measured the ingredients.

Equipment
Knife, cutting board, salad bowl
Ingredients
- 1 Belgian endive
- 1 tablespoon extra virgin olive oil (to taste)
- 1 teaspoon fresh ground pepper
- 1 teaspoon salt
Instructions
Cut endive in quarters, take away the bitter part in the center.
If you want you can cut them into smaller pieces, but the quarts look quite nice imo.
Wash, dry.
Drizzle some olive oil over it.
Grind pepper and salt to taste.
And that's it!
