Ingredients

  • 1 rabbit, cleaned and cut into serving pieces
  • salt and pepper
  • 1 cup flour
  • 2 eggs, beaten
  • cracker crumb
  • 4 tablespoons butter
  • 1 small onion, minced
  • 1 bay leaf

Instructions

  1. Preheat oven to 325°F

  2. Place butter in an uncovered roasting pan and place in oven to melt.

  3. Sprinkle meat with salt and pepper; roll in flour, then beaten eggs, then cracker crumbs.

  4. Place meat in roaster and add onion and bay leaf.

  5. Bake for 1 1/2 to 2 hours or until tender, basting frequently.
