These small delicacies are rich, moist and full of flavour. And so simple. A traditional Austrian Christmas speciality absolutely worthy of being an all-year- rounder.

Equipment

Mixing bowl, electric mixer, baking tray, baking parchment

Ingredients

  • 250 g white sugar
  • 250 g desiccated coconut
  • 3 egg whites
  • 1 teaspoon lemon zest
  • 1 pinch salt

Instructions

  1. Beat egg whites until very firm, gradually adding the sugar and a pinch of salt. About 5-10 minutes.

  2. Slowly and carefully incorporate coconut and lemon cest.

  3. Cover a baking tray with either non stick baking parchment or a little melted butter and form little "heaps/piles" out of the coconut batter (about 1tsp. each).

  4. Bake at 180°C for about 15 minutes. Kokosbusserl are supposed to be soft and moist in the middle, be careful not to burn them.

  5. Enjoy!
