Ingredients

  • 1 cup sugar
  • 1/2 cup margarine
  • 2 eggs
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1/2 cup orange juice
  • 1/2 cup milk
  • 1 teaspoon orange rind, grated
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat oven to 180°C.

  2. Cream together sugar and margarine.

  3. Add eggs, beat till light and fluffy.

  4. Combine dry ingredients in another bowl.

  5. Mix together orange juice and milk.

  6. Add the orange juice mixture alternately with the dry ingredients to the batter, beating till blended.

  7. Fold in orange rind and walnuts.

  8. Bake in a loaf pan about for 45 minutes or until the cake is cooked when tested with a skewer.
