Ingredients

  • 2 large eggs, beaten
  • ¾ cup milk
  • ⅔ cup fine dry breadcrumbs
  • 2 tablespoons grated onion
  • 1 teaspoon salt
  • ½ teaspoon ground sage
  • 1 ½ lbs lean ground beef
  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon dry mustard

Instructions

  1. Prepare the meatloaf mixture: In a large bowl, combine the eggs, milk, breadcrumbs, grated onion, salt, and sage. Add the ground beef and mix until just combined—do not overmix. Shape the mixture into a 9x5-inch rectangle or oval.

  2. Transfer to the slow cooker: Carefully place the meatloaf into the slow cooker pot. Cover and cook on low heat for 6–7 hours .

  3. Make the sauce: In a small bowl, whisk together the ketchup, brown sugar, dry mustard, and ground nutmeg.

  4. Add the glaze: Pour the sauce over the cooked meatloaf. Turn the slow cooker to high heat and cook for an additional 15 minutes .

  5. Serve: Gently remove the meatloaf from the slow cooker and let it rest for 5 minutes before slicing. Serve with mashed potatoes, roasted vegetables, or a fresh salad.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the glaze.
  • Line the slow cooker with parchment paper for easier removal.
