This version of lamb curry has few ingredients and big flavour! Ready in about 40 minutes.

Ingredients
- 3 lbs pieces of lamb
- 4 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 chopped onion, large
- 3 minced garlic cloves
- 1 teaspoon kosher salt
- 1 teaspoon pepper, freshly ground
- 2 tablespoons curry powder
Instructions
Heat olive oil over medium. Coat lamb meat with pepper, salt, and flour.
Saute garlic and onion for about 5-7 minutes, then add meat. Cook for about 3-5 minutes on each side until browned. Then, season with salt, pepper, and curry.
Pour a cup of hot water over the lamb and bring to a boil. After bringing to a boil, cover and simmer for about 30 minutes or until the meat is tender.
Can be served on its own, or with steamed rice.
