Ingredients

  • 1 cup of Walnuts, chopped
  • 1/2 cup of raisins
  • 2 1/2 cups of sifted flour
  • 1 3/4 teaspoon of salt
  • 1 1/2 teaspoon of baking soda
  • 1 teaspoon of pumpkin spice
  • 2 eggs
  • 1 1/2 cups of light brown sugar
  • 2 cups of pumpkin puree
  • 1/3 cup of soft oleo (margarine - can use butter or preferred fat)

Instructions

  1. Preheat oven to 325F - grease and flower tube (bread) pan

  2. Chop nuts into course pieces and chop the raisins fine.

  3. Sift flour with salt, baking soda and spice.

  4. Beat eggs, add sugar, pumpkin puree and margarine.

  5. Beat in dry mixture and stir until well combined (do not over mix)

  6. Add raisins and most of the walnuts.

  7. Pour mixture into the pan.

  8. Sprinkle the topo with reserved nuts.

  9. Bake 1 1/2 hours or until done.

  10. Remove from oven. Let stand 10 minutes before turning onto a wire rack to cool.
