Ingredients

  • 7-8 oz of tomato(s), grape or plum
  • 2 cloves of garlic
  • 1 shallot
  • 1 lime, juice only
  • 1 pepper, chipotle or jalapeño
  • 1 1/2 tablespoon of chili powder, Ancho powder
  • 1 tablespoon of salt, plus extra to taste
  • 1 teaspoon of cumin
  • 1 tablespoon of cilantro, finely chopped
  • 3 avocados
  • 1/2 Teaspoon of salt, Kosher
  • 1/2 teaspoon of cumin, ground
  • 1/2 teaspoon of cayenne pepper, ground
  • 1/2 onion, medium, diced
  • 1/2 pepper, Jalapeno, seeded and minced
  • 2 tomato(s), Plum, seeded and diced
  • 1 tablespoon of cilantro, chopped
  • 1 clove of garlic, minced

Instructions

  1. Chop

  2. Chop the tomatoes to your preferred thickness and transfer to a bowl, leaving as much of the juice and seeds behind as possible.

  3. Add salt and lime juice

  4. Add salt and half the lime juice.

  5. Mince

  6. Mince garlic, shallots, and chipotle.

  7. Combine

  8. Combine with chopped tomatoes.

  9. Add spices

  10. Add the spices, the second half of the lime juice, and incorporate.

  11. Chill

  12. Chill in the refrigerator for at least 30 minutes.

  13. Serve

  14. Top with chopped cilantro

  15. Prepare avocados

  16. Scoop avocado pulp into a large bowl. Toss and coat in lime juice. Once coated, drain and reserve remaining lime juice.

  17. Season

  18. Add salt, cumin, and cayenne.

Notes

Chipotles are smoked jalapenos. These are usually sold in a can of 6-8 peppers with adobo sauce. Once you open the can, you can store unused chili peppers in a plastic container in the fridge. They will keep for a long time; bacteria aren’t brave enough to attack something this spicy.
