Ingredients

  • 4 egg(s)
  • 2 cups of granulated sugar
  • 1 cup of Vegetable oil
  • 2 cups of pumpkin
  • 2 cups of flour
  • 2 teaspoons of sodium bicarbonate (baking soda)
  • 2 teaspoons of baking powder
  • 2 teaspoons of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of salt
  • 1/2 cup of walnuts
  • 1/2 cup of raisins
  • 1 box of powdered sugar
  • 18 oz of cream cheese
  • 1 stick of butter

Instructions

  1. Preheat Preheat oven to 350F

  2. Whisk Whisk together dry ingredients

  3. Mix Beat together wet ingredients in a separate bowl

  4. Combine Mix dry ingredients into wet ingredients

  5. Fold Gently add 1/2 cup walnuts and 1/2 raisins (black walnuts or pecans work well).

  6. Bake Pour batter into greased pan. Bake for 30-35 mins.

  7. Make icing While the cake is baking, mix powdered sugar, cream cheese, and butter until smooth. Makes lots; extra to eat off spoon!

  8. Cool and frost Once the cake is cool, frost generously with cream cheese icing.
