Ingredients
- 4 egg(s)
- 2 cups of granulated sugar
- 1 cup of Vegetable oil
- 2 cups of pumpkin
- 2 cups of flour
- 2 teaspoons of sodium bicarbonate (baking soda)
- 2 teaspoons of baking powder
- 2 teaspoons of cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of salt
- 1/2 cup of walnuts
- 1/2 cup of raisins
- 1 box of powdered sugar
- 18 oz of cream cheese
- 1 stick of butter
Instructions
Preheat Preheat oven to 350F
Whisk Whisk together dry ingredients
Mix Beat together wet ingredients in a separate bowl
Combine Mix dry ingredients into wet ingredients
Fold Gently add 1/2 cup walnuts and 1/2 raisins (black walnuts or pecans work well).
Bake Pour batter into greased pan. Bake for 30-35 mins.
Make icing While the cake is baking, mix powdered sugar, cream cheese, and butter until smooth. Makes lots; extra to eat off spoon!
Cool and frost Once the cake is cool, frost generously with cream cheese icing.
