Ingredients

  • 6 cups of bread, cubed (brioche or challah works well)
  • 3 bananas, ripe, sliced
  • 4 cups of eggs, large
  • 2 cups of heavy cream
  • 1 cup of milk, whole
  • 1 cup of granulated sugar
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • 1/2 cup of walnuts, or pecans, chopped - optional

Instructions

  1. Preheat the Oven Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

  2. Prepare the Bread and Bananas In a large bowl, combine the cubed bread and sliced bananas. Toss them together and place the mixture in the prepared baking dish.

  3. Make the Custard In another bowl, whisk together the eggs, heavy cream, whole milk, sugar, vanilla extract, ground cinnamon, and salt until well combined.

  4. Pour Custard Over Bread and Bananas Pour the custard mixture over the bread and bananas in the baking dish. Press down lightly with a spoon to ensure all the bread is soaked in the custard. Let it sit for about 15 minutes to allow the bread to absorb the custard.

  5. Optional: Add Nuts Sprinkle chopped nuts over the top if desired.

  6. Bake Bake in the preheated oven for 45-50 minutes or until the top is golden brown, and the center is set.

  7. Serve Allow the bread pudding to cool for a few minutes before serving. Optionally, garnish with whipped cream and additional sliced bananas.
