Ingredients

  • 1 package of Quorn, meatless fillets
  • 2 tablespoons of olive oil
  • 1 shallot(s), or onion - finely chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, red, sliced
  • 1 bell pepper, yellow, sliced
  • 1 carrot(s), finely sliced
  • 1 zucchini, finely sliced
  • 1 can (400g) of tomato(s), crushed
  • 1/2 cup whole, pitted kalamata olives
  • 1/2 cup of broth, vegetable
  • 1/2 cup of wine, dry, red (optional)
  • 1 teaspoon of oregano
  • 1 teaspoon of basil, or one tablespoon of fresh, chopped
  • 1/2 teaspoon of thyme, dried
  • salt and pepper, to taste
  • 1/4 cup of parsley, for garnish

Instructions

  1. Prepare Quorn Meatless Fillets Cook the Quorn Meatless Fillets according to the package instructions. Usually, this involves either pan-frying or baking. Once cooked, set aside.

  2. Sauté Onion and Garlic In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant.

  3. Add Vegetables Add the sliced red and yellow bell peppers, carrot, and zucchini to the skillet. Cook for 5-7 minutes, or until the vegetables are slightly tender.

  4. Add Tomatoes and Broth Pour in the crushed tomatoes, vegetable broth, and red wine (if using). Stir well to combine.

  5. Season Add the dried oregano, dried basil, dried thyme, salt, and black pepper to the skillet. Stir to incorporate the seasonings.

  6. Simmer Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let it simmer for about 15-20 minutes to allow the flavors to meld and the sauce to thicken.
