Ingredients

  • 1 eggplant (aubergine), large, diced
  • 2 zucchini, sliced
  • 1 bell pepper, yellow, sliced
  • 1 bell pepper, red, sliced
  • 1 onion, large, sliced
  • 3 cloves of garlic, minced
  • 4 tomato(s), large, diced
  • 1/4 cup of tomato paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • salt and pepper, to taste
  • basil, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Sauté In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.

  3. Add eggplant, zucchini, and bell peppers. Cook for 5-7 minutes until vegetables are slightly tender.

  4. Stir in diced tomatoes, tomato paste, thyme, rosemary, salt, and pepper. Cook for an additional 5 minutes.

  5. Bake Transfer the vegetable mixture to a baking dish. Arrange the slices evenly.

  6. Bake in the preheated oven for 25-30 minutes or until vegetables are tender and flavors meld.

  7. Serve Garnish with fresh basil before serving.
