These herby sausage rolls are perfect for parties, picnics, or as a tasty snack any time of day.

Ingredients
- 1 sheet of puff pastry, ready made
- flour, for dusting
- 1 egg(s), beaten
- 8 sausage, Italian or other herby kind
- salt and pepper
- small handful of thyme, fresh leaves
Instructions
Prepare Line a baking sheet with parchment paper.
Lightly dust a clean surface with flour. Roll out the puff pastry sheet to a rectangle of about 48x32cm (19x12½in). Use a rolling pin to gently flatten the pastry to reduce puffing.
Cut and Divide Cut the large rectangle in half lengthways, then cut both smaller rectangles into eight equal sections.
Assemble the Rolls Brush one end of each rectangle with a little beaten egg. Place a piece of sausage at the other end of each rectangle.
Season the sausage with salt and pepper, then sprinkle with fresh thyme leaves.
Roll the sausage up in the pastry to enclose and repeat with all the sausages.
Chill and Prepare for Baking Place the sausage rolls in the fridge for 20 minutes to allow the pastry to firm up.
Preheat Preheat your oven to 200°C (400°F) while the sausage rolls are chilling.
Bake After chilling, remove the sausage rolls from the fridge and score the tops with a sharp knife for decoration, or prick them with a fork.
Brush the sausage rolls all over with the remaining beaten egg.
Place them on the prepared baking sheet and bake in the preheated oven for 25–30 minutes, or until the pastry is golden-brown and crisp.
Once baked, remove the sausage rolls from the oven and let them cool slightly before serving.
