Robin's beloved Lemon Cake: a moist yellow delight topped with zesty lemon icing. Serves 12-16 hot or cold.

Ingredients

  • 1 package of Yellow Cake Mix
  • 4 egg(s)
  • 3/4 cup of Vegetable oil, (salad oil)
  • 3/4 water
  • 2 cups of powdered sugar, sifted
  • 2 lemon, whole lemons, juiced and zest grated

Instructions

  1. The Cake Preheat oven to 350°F (177°C) - grease and flour the pan.

  2. Combine all ingredients - beat for 4 minutes.

  3. Pour into prepared pan.

  4. Bake Bake at 350°F (177°C) for 35-40 minutes (until toothpick inserted comes out clean).

  5. Make the icing While the cake is baking, place juice and rind of 2 lemons in the blender. Add powdered sugar and blend until smooth.

  6. Remove cake from the oven and punch holes in the top with a meat fork.

  7. Pour the icing over the top while still hot.
