Ingredients

  • 1 cup (2 sticks) of unsalted butter, softened
  • 1 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of mint extract
  • 2 1/2 cups of flour
  • 1 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 teaspoon of salt
  • 1 1/2 cups of chocolate chips
  • green food coloring - optional

Instructions

  1. Preheat Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

  2. Mix In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Beat in the eggs, one at a time, until well combined. Then, add the vanilla extract and peppermint extract, mixing until incorporated. If using green food coloring, add a few drops at this stage and mix until desired color is achieved.

  4. In a separate bowl, whisk together the flour, baking soda, and salt.

  5. Combine Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Add chocolate chips Gently fold in the chocolate chips until evenly distributed throughout the dough.

  7. Scoop Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

  8. Bake Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
