Ingredients

  • 1 pound of dates
  • 3/4 cup of granulated sugar
  • 1 cup of water
  • 1 tablespoon of lemon juice
  • 1 cup of granulated sugar
  • 1 cup of butter
  • 1 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 cup of buttermilk
  • 2 cups of flour
  • 2 cups of oatmeal

Instructions

  1. Make the Date Paste Combine dates, water, sugar and lemon juice. In a saucepan, gently boil to a paste.

  2. Cookies Whisk together dry ingredients until well combined.

  3. Cream together butter and sugar until light and fluffy.

  4. Beat in buttermilk

  5. Combine dry and wet mixtures, mixing well but do not over mix.

  6. Preheat Preheat oven to 350°F (175°C)

  7. Roll dough out on a well floured board to 1/4 thick.

  8. Using a biscuit cutter or glass, cut out round cookie shapes.

  9. Assemble Spread the paste on cookie dough circles, place another cookie dough circle on top.

  10. Bake Bake in preheated oven at 350°F (175°C) until golden brown (10-15 minutes)
