A delicious way to use up fruit before it goes bad! Ripe banana, a few strawberries and a kiwi blended perfectly with oatmeal and a touch of cinnamon. Makes a great breakfast on the go!

Ingredients

  • 1 banana(s)
  • 2 strawberries
  • 1 kiwi
  • 1 egg(s)
  • 1/4 cup of Vegetable oil
  • 1/2 cup of yogurt
  • 1 teaspoon of vanilla extract
  • 1 cup of oatmeal
  • 1 cup of flour
  • 1/2 cup of brown sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon

Instructions

  1. Preheat your oven to 300°F (149°C) and prepare tins with liners.

  2. Mash or blend strawberries, banana and kiwi.

  3. In a mixing bowl, whisk together dry ingredients. Set aside.

  4. In a separate bowl, whisk together egg, oil, yoghurt (or milk if substituting) and vanilla.

  5. Whisk together wet and dry ingredients. Fold in fruit mixture until well combined but do not overmix.

  6. Scoop or spoon into muffin liners.

  7. Bake in preheated oven 18-20 minutes or until toothpick comes out clean.

  8. Cool for a few minutes in the pan and enjoy!

Notes

I grind my oatmeal in a food processor before adding flour for a lighter texture and crumb. Makes a dozen.
