This moist and flavorful cake with the nutty taste of almonds and the creaminess of ricotta is a wonderful treat. It’s perfect for any occasion or as a delightful dessert with a cup of coffee or tea.

Ingredients

For the Cake

  • 1 cup (2 sticks) of butter
  • 1 cup of granulated sugar
  • 4 egg(s)
  • 1 teaspoon of vanilla extract
  • 1 cup of ricotta cheese
  • 1 1/2 cups of flour
  • 1 cup of almond flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of sodium bicarbonate (baking soda)
  • 1/4 teaspoon of salt

For the Almond Glaze

  • 1 cup of powdered sugar
  • 2 tablespoons of almond milk
  • 1/2 teaspoon of almond extract
  • sliced almonds for garnish

Instructions

  • Preheat the Oven
    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • Mix
    In a large bowl, cream together the softened butter and sugar until light and fluffy
  • Beat
    Add eggs one at a time, beating well after each addition. Add vanilla extract and mix until combined.
  • Stir
    Stir in the ricotta cheese until smooth
  • Whisk
    In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  • Combine
    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour
    Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake
    Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Cool
    Cool the cake for at least 10 minutes before adding glaze
  • Make the Almond Glaze
    In a small bowl, whisk together powdered sugar, almond milk, and almond extract until smooth.
  • Glaze
    Drizzle the almond glaze over the cooled cake. Sprinkle sliced almonds over the top.
  • Serve
    Allow the glaze to set. Slice, serve and enjoy!
