Ingredients

  • 1 pound of chorizo, sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 15 oz cans of beans, cannellini, drained and rinsed
  • 1 15 oz can of tomato(s), diced
  • 1 cup of broth, chicken
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cumin
  • salt and pepper, to taste
  • parsley, chopped for garnish (optional)

Instructions

  1. Prepare chorizo
    In a large pot, cook chorizo over medium heat until browned. Remove excess oil, leaving about 1 tablespoon.
  2. Sauté
    Add chopped onion and garlic to the pot. Sauté until softened.
  3. Stir in smoked paprika and cumin, cooking for 1-2 minutes to release flavors.
  4. Simmer
    Add beans, diced tomatoes, and chicken broth to the pot. Season with salt and pepper. Bring to a simmer.
  5. Let the stew simmer for 15-20 minutes, allowing flavors to meld.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
